Many possibilities. Each school year, the competition in the manufacture of concrete canoes:

Corrugated boxes and decision-making is a normal school year:

and of course there are sites and ideas in the construction of two things:

To make the local Boy Scouts to the fabric folding kayak with a waterproof color on the skin. The basic structure is, but the idea on a scale large enough to kayak for 2 people:

There are always traditional materials: wood, fiberglass, bark of the birch, etc. but if you are looking for something more traditional, why not a boat:

You can use paint and canvas as a hiding place or, more simply, plastic sheeting. In part, no pop metal shutters as well as for thin-walled tubes, nailed like electrical conduction in the form of curved, or strips of bamboo.

Then there Sonotube - cardboard tubes used for concrete forms:

I suppose you could use two to make a small catamaran

(You may use steel bars or angle iron to keep them together.)

The possibilities seem endless, so I wonder why you bothered to ask.

Enjoy.
